Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 8×4-inch loaf pans.

  3. In a large bowl, mix grated zucchini, vegetable oil, eggs, and vanilla until well combined.
  4. Gently fold the dry mixture into the wet ingredients along with walnuts until just combined—do not overmix!
