  • ¾ cup unsalted butter, softened
  • 1¾ cups granulated sugar

  • 1½ tsp vanilla extract

  • 1¼ cups whole milk
  • 1½ cups fresh or frozen raspberries
  • ½ cup sugar
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2–3 tbsp milk
  • 1 tsp vanilla extract
  • Fresh raspberries for decoration
  • White chocolate curls or shavings
  • Mint leaves for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, then stir in vanilla extract and melted white chocolate.
  5. Gradually mix in dry ingredients alternately with milk until combined.
  6. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. To make the raspberry filling, cook raspberries with sugar and lemon juice until thickened; allow to cool.
  8. For the frosting, beat softened butter and gradually add powdered sugar; mix in melted white chocolate and milk to desired consistency.
