  • 8 ounces cow’s milk feta cheese
  • ¼ cup honey
  • 1 teaspoon red pepper flakes
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons whole milk (or plain Greek yogurt)
  • 2 tablespoons olive oil
  • ⅓ cup chopped pistachios (for garnish)

Instructions

  1. Prepare the feta by breaking it into pieces and rinsing briefly under cold water to reduce saltiness. Drain well.
  2. In a saucepan over medium heat, combine honey and red pepper flakes until simmering. Remove from heat and let cool.
  3. In a food processor, blend drained feta with lemon juice and milk/yogurt until it resembles ricotta. Gradually add olive oil while blending until smooth.
  4. Transfer whipped feta to a serving bowl, create a swirl on top, drizzle cooled hot honey over it, and sprinkle with chopped pistachios. Serve immediately with toasted baguette slices.
