  • 500 g butternut squash (peeled and cubed)
  • 3 sprigs rosemary (leaves picked and chopped)
  • 4 cloves garlic (peeled)
  • 1 yellow onion (finely sliced)
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g parmesan (grated)
  • Juice of 1 lemon
  • 30 g walnuts (chopped)
  • 75 ml milk
  • 50 g turkey strips or slices (chopped)
  • Fresh mozzarella (torn into pieces)

Instructions

  1. Preheat oven to 180ºC.
  2. On a baking tray, combine butternut squash, onion, garlic, rosemary, and olive oil. Toss until coated.
  3. Roast for about 30 minutes until tender.
  4. Blend roasted vegetables in a food processor until smooth; add water if needed.
  5. In a frying pan, cook turkey strips in olive oil until crispy.
  6. Stir in purée with water and milk; add gnocchi and simmer for 8–10 minutes.
  7. Mix in parmesan and lemon juice; season to taste.
  8. Top with mozzarella and broil for about 5 minutes until melted.
  9. Garnish with remaining turkey strips, walnuts, and parsley before serving.
