Ingredients

  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (125g each), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 tablespoons pesto
  • Butter, as required

Instructions

  1. Assemble all ingredients: slice sourdough and mozzarella.
  2. Spread pesto on one side of four sourdough slices.
  3. Layer mozzarella slices and chopped sun-dried tomatoes over the pesto.
  4. Top with another slice of sourdough (pesto side down).
  5. Butter the outside of both bread slices generously.
  6. Heat a skillet over medium heat and grill the sandwich until golden brown (about 3-4 minutes per side).
  7. Slice into triangles and serve hot.
