  • 1 cup brown sugar (packed)
  • 1/4 cup molasses
  • 2/3 cup pumpkin puree
  • 1 large egg
  • 1/2 cup sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and black pepper.
  3. In a stand mixer, cream room temperature butter until smooth. Add brown sugar, molasses, and pumpkin puree; beat until fluffy.
  4. Incorporate the egg and mix well.
  5. Gradually add dry ingredients until just combined.
  6. Chill the dough for at least an hour.
  7. Roll dough into balls, coat with sugar, flatten slightly on lined baking sheets.
  8. Bake for 12-14 minutes until set but still soft in the center.
