  • 2 ripe avocados, diced
  • 2 ripe mangoes, diced
  • ¼ red onion, finely diced
  • ¼ cup chopped fresh cilantro
  • Juice from 23 limes
  • 23 cups cooked rice or quinoa
  • 2 tablespoons olive oil
  • Optional: jalapeño for heat

Instructions

  1. Heat olive oil in a skillet over medium heat. Season shrimp with chili powder, cumin, garlic powder, salt, and pepper. Cook shrimp for about 3-4 minutes on each side until pink and opaque.
  2. In a bowl, combine diced mangoes, red onion, cilantro, lime juice, and jalapeño (if using) to create salsa.
  3. In serving bowls, layer cooked rice or quinoa as the base. Top with shrimp and mango salsa, then add diced avocado.
