Ingredients

Scale
  • 1/2 cup unsalted butter (1 stick, melted)
  • 1 large egg
  • 1/2 cup light brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt (or to taste)
  • 3/4 cup semi-sweet chocolate chips (for sprinkling)
  • 1 1/2 cups sweetened shredded coconut (loosely laid in measuring cup, not packed)
  • two-thirds of one 14-ounce can sweetened condensed milk (about 10 ounces)
  • 4 to 5 ounces salted caramel sauce (homemade or store-bought; regular caramel sauce may be substituted)
  • 3/4 cup semi-sweet chocolate chips (melted for drizzling)

Instructions

  1. Preheat your oven to 350°F. Greasing your 9-inch pie dish with cooking spray ensures that your cookie pie comes out easily after baking.
  2. In a large microwave-safe bowl, melt the butter—this usually takes about one minute on high power.
  3. Once the butter has cooled slightly, add the egg, brown sugar, and vanilla extract. Whisk until everything is smooth and well combined.
  4. Gently add the flour and salt into your wet mixture. Stir until just combined.
  5. Pour the batter into your prepared pie dish and smooth the top with a spatula. Bake for about 10 to 12 minutes until the edges are firming up slightly.
  6. Once baked briefly, remove it from the oven and immediately sprinkle 3/4 cup of chocolate chips over the crust while it's still warm.
  7. Evenly sprinkle shredded coconut over the melted chocolate chips.
  8. Drizzle sweetened condensed milk over the coconut layer.
  9. Repeat with drizzling caramel sauce on top of everything else.
  10. Return your pie dish to the oven for about another 25 minutes or so until everything looks set but slightly bubbling at the edges.
  11. Allow your pie to cool completely on a wire rack before melting some more chocolate for drizzling on top.
  12. Melt remaining chocolate chips in a small bowl until smooth—then drizzle them decoratively over your pie.
  13. Finally, once everything has cooled down and set properly, slice up your Samoas Cookie Pie!
