  • 1 cup brown sugar
  • 1 3/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup melted unsalted butter
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a small bowl, combine cold butter, brown sugar, and flour for the streusel topping until crumbly. Set aside.
  3. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. In a large mixing bowl, mix melted butter, brown sugar, granulated sugar, eggs, vanilla extract, pumpkin puree, and buttermilk until smooth.
  5. Fold the dry ingredients into the wet mixture until just combined.
