  • ½ Cup pumpkin puree

  • 1 Teaspoon vanilla extract

  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips (for topping)
  • Mini vegan marshmallows (for topping)
  • Graham crackers (crushed for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together room temperature butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until smooth. Add food coloring if desired.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Gently fold in chocolate chips, mini vegan marshmallows, and graham cracker pieces.
  7. Scoop tablespoon-sized dough onto a baking sheet lined with parchment paper.
  8. Top each cookie with extra marshmallows and chocolate chips.
  9. Bake for 12 to 14 minutes or until edges are golden but centers remain soft.
  10. Allow to cool slightly before transferring to a wire rack.
