  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 2-quart casserole dish.
  2. In a medium bowl, sift together all-purpose flour, whole wheat pastry flour, baking powder, salt, granulated sugar, cinnamon, ginger, nutmeg, and cloves.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla until combined.
  4. Gradually add the wet mixture to the dry ingredients while stirring gently to avoid overmixing.
  5. Pour the batter into the greased dish and spread evenly.
  6. In a separate bowl, mix granulated sugar, brown sugar, cinnamon, and chopped pecans; sprinkle over the batter.
  7. Carefully pour hot water over the topping without stirring.
  8. Bake for about 40 minutes until set; allow cooling before serving.
