  • 12 ounces linguine or fettuccine
  • 1/2 pound medium shrimp, peeled and deveined
  • 1/2 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced

Instructions

  1. Cook the pasta according to package instructions in salted water until al dente. Reserve half a cup of pasta water before draining.
  2. Toss shrimp and chicken with half a tablespoon of Cajun seasoning.
  3. In a large skillet over medium-high heat, sear the chicken until golden brown (4–5 minutes). Remove and set aside.
  4. In the same skillet, cook the shrimp (2–3 minutes per side) until pink and opaque; remove and set aside.
  5. Brown sliced sausage (or substitute) in the skillet for about 2–3 minutes.
  6. Sauté sliced bell peppers and onions until softened (4–5 minutes). Add garlic and cook until fragrant (1 minute).
  7. Melt butter in the skillet; whisk in flour to create a roux for about 2 minutes.
  8. Gradually whisk in chicken broth and then heavy cream; stir until smooth.
  9. Mix in Parmesan cheese and remaining Cajun seasoning; simmer until thickened.
  10. Return proteins and sautéed vegetables to the sauce; add drained pasta and toss well.
  11. Serve garnished with parsley, additional Parmesan cheese, and green onions.
