  • 1/4 cup apple juice, cooking apple vinegar, or apple vinegar
  • 5 tablespoons flour (or gluten-free flour)
  • 3 cups hot veggie broth, chicken stock, or beef broth
  • 1/2 cup to 1 cup sour cream (or vegan sour cream/cashew cream)
  • Pepper to taste

Instructions

  1. In a large pot, heat olive oil or vegan butter over medium-high heat. Sauté diced onion for 3-4 minutes until golden.
  2. Add garlic and cook for another 2 minutes. Then stir in sliced mushrooms, salt, and rosemary; sauté for about 10-12 minutes until tender.
  3. Sprinkle flour over the mixture and toast for 1-2 minutes. Gradually stir in hot broth until fully combined.
  4. Mix in sour cream until creamy and adjust seasoning with pepper.
  5. If too thick, add more broth to achieve desired consistency.
