  • 2 cups sugar
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 4 large eggs (at room temperature)
  • ¾ cup vegetable or canola oil
  • ½ cup sour cream
  • 1 teaspoon pure vanilla extract
  • ½ cup softened unsalted butter
  • 1 jar vegan marshmallow fluff
  • 2 ½ cups confectioners’ sugar
  • milk (for spreadability)
  • 48 M&Ms, Skittles, or other small, round colored candies

Instructions

  1. Preheat the oven to 350°F and line muffin tins with paper liners.
  2. In a saucepan, boil 1 ½ cups of water; remove from heat and whisk in cocoa powder and sugar until smooth. Let cool for about 15 minutes.
  3. Combine flour, baking powder, baking soda, and salt in one bowl. In another bowl, beat eggs, oil, sour cream, and vanilla together. Add cooled chocolate mixture and mix well.
  4. Gradually fold in the dry ingredients until just combined.
  5. Pour batter into liners, filling them about ¾ full. Bake for approximately 20 minutes or until a skewer comes out clean.
  6. While cooling, prepare frosting by beating butter with marshmallow fluff and confectioners’ sugar; add milk for spreadability.
  7. Once cooled completely, decorate cupcakes by piping frosting into bandages and adding candy eyes.
