  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons olive oil

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté the diced onion until translucent (about 5 minutes). Add minced garlic and cook for an additional 30 seconds. Remove from heat.
  2. In a large bowl, combine sautéed onion and garlic with chopped spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until well combined.
  3. Shape the mixture into about eight patties (½ inch thick).
  4. Heat remaining olive oil in the skillet over medium heat. Cook patties for about 5-6 minutes on each side until golden brown and cooked through.
  5. Drain on paper towels and serve warm with garnishes such as extra dill or lemon wedges.
