  • 1 pound chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain rice (such as basmati or jasmine)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken seasoned with salt and spices; brown for about 5-7 minutes.
  2. Remove chicken and set aside. In the same skillet, sauté onions and garlic until fragrant, about 3-4 minutes. Add bell pepper and cook for an additional 2 minutes.
  3. Stir in rice for about 1 minute before adding drained tomatoes and chicken broth; bring to a simmer.
  4. Return chicken to the skillet; cover and reduce heat. Cook gently for about 20-25 minutes until the rice is tender.
  5. Stir in olives and feta cheese; fluff rice with a fork before serving.
