  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 4 ripe tomatoes, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika powder
  • ½ tsp smoked paprika powder (optional)
  • â…“ tsp turmeric
  • 1 tbsp tomato paste
  • dash of salt & black pepper
  • 1 can (15oz) canned white beans (Cannellini, Navy, Great Northern)
  • 1 cup veggie broth
  • ¾ cup dry white beans (Cannellini, Navy, Great Northern)
  • 1 ½2 cups veggie broth

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté the finely chopped onion until translucent.
  2. Add garlic and chopped tomatoes; cook until the tomatoes break down.
  3. Stir in spices: cumin, paprika, turmeric, tomato paste, salt, and black pepper. Cook for another minute until fragrant.
  4. Add canned and dry white beans along with one cup of veggie broth; mix well.
  5. Cover and let simmer for about 25 minutes on low heat (or use the Instant Pot for 10 minutes on pressure cook).
  6. Adjust consistency with more veggie broth if needed. Season to taste before serving.
