  • 1 box (3.4 oz) instant lemon pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 cups powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)
  • Optional: 1 tbsp milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour your baking dish or line it with parchment paper.
  2. In a large bowl, combine yellow cake mix, instant lemon pudding mix, eggs, vegetable oil, water, fresh lemon juice, and lemon zest. Mix on medium speed for about 2 minutes until smooth.
  3. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  4. While baking, whisk together powdered sugar and fresh lemon juice in another bowl to make the glaze; add milk if desired for creaminess.
