  • 220 g wheat flour (Type 405)
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 egg yolk
  • 100 ml warm water
  • 100 g sour cream
  • 100 g crème fraîche
  • 250 g Hokkaido pumpkin
  • 1 red onion
  • 100 g feta cheese
  • 10 walnuts
  • 1 tbsp thyme

Instructions

  1. To make the dough, mix the flour, olive oil, salt, egg yolk, and warm water in a bowl until smooth. Knead briefly, cover with a damp cloth, and let rest for 30 minutes.
  2. Preheat your oven to 220°C (428°F).
  3. In a separate bowl, combine sour cream and crème fraîche. Season with salt, pepper, and nutmeg. Thinly slice the Hokkaido pumpkin and onion; crumble the feta cheese and chop the walnuts.
  4. Roll out the rested dough as thinly as possible on a parchment-lined baking sheet. Spread the creamy mixture over the dough and top with pumpkin slices, onions, feta crumbles, and chopped walnuts.
