  • 46 ounce salmon filets
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado
  • 1 cucumber (sliced)
  • 1 cup edamame (cooked)
  • 1/2 cup sriracha mayo

Instructions

  1. Cut salmon into 1-inch cubes (skin optional).
  2. Whisk together soy sauce (or tamari), honey, sriracha, garlic, and water in a bowl.
  3. Marinate salmon cubes in the mixture for at least 20 minutes.
  4. Heat oil in a skillet over medium-high heat; cook marinated salmon for 2-3 minutes on each side until golden brown.
  5. Add leftover marinade to the skillet and cook until thickened.
  6. Assemble bowls with cooked rice, salmon, avocado slices, cucumber, edamame, and drizzle with sriracha mayo.
  7. Garnish as desired before serving.
