Ingredients

Scale
  • 2.5 lbs Yukon Gold potatoes
  • 4 tablespoons unsalted butter or 3 tablespoons olive oil + 1 tablespoon butter
  • 1 large yellow onion
  • 56 cloves garlic
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 2 cups sharp cheddar cheese
  • Fresh parsley, chives, and thyme

Instructions

  1. Peel and cube the Yukon Gold potatoes into ½-inch pieces.
  2. In a large pot, heat butter (or olive oil and butter) over medium heat. Sauté the chopped onion for about 5-7 minutes until translucent.
  3. Add minced garlic and cook for another minute before stirring in flour to create a roux.
  4. Gradually whisk in broth until smooth; bring to a gentle simmer.
  5. Add the potato cubes, cover, and cook on medium-low heat for 15-20 minutes until tender.
  6. Blend half of the soup to achieve creaminess and return it to the pot.
  7. Lower heat and stir in milk and optional heavy cream; add fresh herbs.
  8. Remove from heat and gradually incorporate shredded cheddar cheese until melted.
  9. Season with salt and black pepper to taste before serving.
