  • 2/3 cup maple syrup or honey
  • 1/4 cup 2% Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence. Whisk until smooth.
  3. In another bowl, mix whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to the wet mixture and fold until just combined; do not overmix.
  5. Spoon batter into muffin tins lined with paper liners or greased lightly, filling each cup about two-thirds full.
  6. Bake for approximately 18 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for five minutes in the pan before transferring to a wire rack.
