  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract (optional, but recommended)
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract (optional, but recommended)
  • 2 eggs (at room temperature)
  • 1 1/2 cups chopped pecans (raw and unsalted)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a large bowl, mix together almond flour, melted coconut oil, maple syrup, and optional vanilla extract until well combined. Press firmly into the prepared pan and bake for 10 minutes.
  3. While the crust is baking, whisk together coconut sugar, melted coconut oil, maple syrup, optional vanilla extract, and eggs until smooth. Fold in chopped pecans.
  4. Pour the filling over the warm crust and bake for another 20-25 minutes until set. Allow cooling in the pan for at least 30 minutes before transferring to the fridge to chill for 1 hour.
