  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips
  • 1 cup chocolate chips for topping
  • 1 tsp coconut oil for topping

Instructions

  1. In a bowl, combine almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt. Mix until smooth. Fold in chocolate chips.
  2. Line a cutting board with parchment paper and spread the cookie dough mixture evenly to about 1/2-inch thickness.
  3. In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals until smooth.
  4. Pour melted chocolate over the cookie dough layer and sprinkle optional flaky sea salt on top.
