  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper

  • 1/4 cup soy sauce (or coconut aminos)
  • 1/4 cup pineapple juice
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 cup cooked jasmine rice
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup toasted coconut flakes (for garnish)
  • 1/2 cup diced fresh pineapple
  • 1/4 cup red bell pepper, thinly sliced
  • 1/4 cup cucumber, thinly sliced
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. Cook jasmine rice as per package instructions.
  2. In a small bowl, mix garlic powder, onion powder, paprika, black pepper, and salt; rub over chicken breasts.
  3. Heat olive oil in a skillet over medium heat; sear chicken for 6-7 minutes on each side until golden and cooked through.
  4. In another bowl, whisk together soy sauce, pineapple juice, honey, rice vinegar, and ginger; pour into skillet after removing chicken and bring to a simmer for 3-4 minutes.
  5. Slice chicken and assemble bowls with rice as the base topped with chicken slices, pineapple chunks, red bell pepper, cucumber rounds, and drizzle with sauce.
  6. Garnish with green onions, coconut flakes, and sesame seeds before serving warm.
