  • 1 (8-ounce) can crushed pineapple with juice
  • 1/2 cup + 1 tbsp sunflower oil
  • 1/2 cup macadamia nuts (chopped)
  • 1/2 cup unsweetened coconut flakes

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Dry roast macadamia nuts until slightly brown; chop them once cooled.
  3. In one bowl, mix flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk eggs, vanilla extract, mashed bananas, crushed pineapple (with juice), and oil.
  5. Combine wet and dry ingredients gently without overmixing.
  6. Fold in macadamia nuts and coconut flakes.
  7. Pour batter into the prepared loaf pan and bake for 55-65 minutes or until a knife comes out clean.
  8. Let cool before slicing.
