  • 1 red bell pepper, chopped

  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/4 cup diced tomatoes (optional)
  • 1/4 cup shredded cheddar cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and bake on a lined baking sheet for 40-50 minutes until tender.
  2. In a skillet over medium heat, heat olive oil and sauté chopped onion until softened (3-4 minutes). Add minced garlic and chopped bell pepper; cook until fragrant.
  3. Add ground turkey to the skillet. Cook while breaking apart with a spatula until browned (6-8 minutes).
  4. Stir in ground cumin, chili powder, paprika, salt, and pepper; mix well.
  5. Add corn kernels and diced tomatoes (if using) to the skillet; cook for another few minutes until heated through.
  6. Slice baked sweet potatoes open lengthwise and fluff insides with a fork. Spoon in the turkey mixture generously.
  7. If desired, sprinkle shredded cheddar cheese on top before baking for an additional 5-7 minutes until melted.
