  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75 g) butter
  • 2 tbsp heavy cream
  • 60 g (3/4 cup) freshly grated parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt & pepper to taste

Instructions

  1. Roast the garlic by cutting off the bulb's top, drizzling with olive oil, wrapping in foil, and baking until soft.
  2. Peel and chop baking potatoes into chunks; boil in salted water until fork-tender. Drain and let steam dry.
  3. Mash the potatoes with butter and cream until smooth; mix in roasted garlic, parmesan, salt, and pepper. Let cool slightly before adding egg yolks.
  4. Pipe the mixture onto a parchment-lined baking tray into swirled shapes.
  5. Drizzle with melted butter and bake at 200°C (400°F) until golden brown.
