  • 5 onions (thinly sliced)
  • 300 g cavatappi macaroni
  • 1/2 cup beef broth
  • 3 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp flour + 3 tbsp water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tsp sugar
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/2 tsp nutmeg

Instructions

  1. In a large skillet over medium heat, sauté thinly sliced onions in olive oil for 30-40 minutes until golden brown.
  2. Add beef broth if onions stick to the pan and simmer for an additional 10 minutes.
  3. In the same skillet, melt butter and whisk in flour; gradually add heavy cream while stirring until thickened.
  4. Stir in two-thirds of the caramelized onions, along with seasoning and Parmesan cheese.
  5. Cook cavatappi macaroni in salted water until just shy of al dente; drain.
  6. Mix pasta with creamy sauce until well-coated.
  7. Transfer to a baking dish, top with remaining onions and breadcrumbs; bake at 350°F for 10-15 minutes until golden.
  8. Let cool slightly before serving.
