  • 2 whole oranges

  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey (for glaze)
  • ½ cup fresh orange juice

Instructions

  1. Prepare the Oranges: Rinse oranges and simmer in water for about an hour to soften.
  2. Blend: Drain and blend the softened oranges until smooth.
  3. Preheat Oven: Set oven to 350°F (175°C) and grease a 9-inch springform pan.
  4. Mix Batter: In a bowl, combine blended oranges, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract until smooth.
  5. Bake: Pour batter into the pan and bake for approximately one hour or until a toothpick comes out clean.
  6. Make Glaze: Boil honey and fresh orange juice in a pot until thickened; brush over cooled cake.
