  • 2 tablespoons ghee or sunflower oil
  • 1 onion, finely chopped
  • 3 chicken breasts (approx. 525g), cut into bite-sized pieces
  • 2 garlic cloves, minced
  • 2 teaspoons minced ginger
  • 1 teaspoon ground cumin
  • 1½ teaspoon ground coriander
  • 1½ teaspoon garam masala
  • ½ teaspoon mild chili powder (optional)
  • ½ teaspoon ground turmeric
  • ¼ teaspoon salt
  • ¼ teaspoon white pepper
  • 2 tablespoons tomato purée
  • ½ cup plain yogurt
  • ½ cup coconut cream
  • 2 tablespoons ground almonds
  • 1 tablespoon sugar
  • 4 tablespoons double cream
  • Freshly chopped coriander for garnish
  • Boiled rice and/or flatbread (such as chapati or naan)

Instructions

  1. Heat ghee or oil in a large frying pan over medium heat. Sauté the onion for about 5 minutes until softened.
  2. Add chicken pieces and cook for another 5 minutes until golden.
  3. Stir in garlic, ginger, and spices; cook for 2 minutes to release flavors.
  4. Mix in tomato purée, yogurt, coconut cream, ground almonds, and sugar. Bring to a gentle boil then reduce heat and simmer for 6–8 minutes.
  5. Stir in double cream before serving. Garnish with fresh coriander and serve over rice or alongside flatbread.
