  • 1 1/2 cups shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

  3. In another bowl, mix eggs, melted butter, oil, brown sugar, and vanilla until smooth.
  4. Stir the dry ingredients into the wet mixture until just combined; gently fold in zucchini and 3/4 cup chocolate chips.
  5. Pour the batter into the prepared pan and top with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out mostly clean.
  7. Let cool in the pan for about 15 minutes before transferring to a wire rack.
