  • 67 medium Yukon gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup gruyere cheese (or substitute with more sharp cheddar)
  • ¼ cup grated parmesan

Instructions

  1. Preheat the oven to 375°F.
  2. Spray a baking dish with nonstick spray and layer the sliced potatoes and onions.
  3. In a saucepan, melt butter, whisk in flour, then gradually add almond milk while stirring until thickened.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper.
  5. Pour the sauce over the potatoes.
  6. Cover with foil and bake for 45 minutes.
  7. Remove foil, add gruyere and parmesan on top, then bake uncovered for an additional 30-45 minutes until golden brown.
  8. Garnish with fresh parsley before serving.
