  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water (or milk)
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying

  1. Begin by whisking together flour, chili powder, salt, and pepper in a shallow bowl.
  2. In another bowl, mix eggs and water (or milk) for the egg wash.
  3. Prepare shredded coconut in one bowl and panko breadcrumbs in another.
  4. Coat each chicken strip in flour mixture, then dip in the egg wash followed by coconut flakes and panko.
  5. Heat oil in a skillet over medium heat. Fry coated chicken tenders in batches for about 2-3 minutes per side until golden brown.
