  • 1 ½ cups graham cracker crumbs
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes of instant coconut cream pudding mix
  • 3 cups half-and-half
  • 8 oz Cool Whip
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. For the crust, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a 9×13 inch baking dish.
  2. In a bowl, beat cream cheese until smooth. Gradually add powdered sugar and coconut extract. Fold in one container of Cool Whip and spread over the crust.
  3. Whisk together pudding mix and half-and-half until thickened (about 2 minutes). Spread over the cream cheese layer.
  4. Top with remaining Cool Whip and sprinkle with toasted shredded coconut.
  5. Cover and refrigerate for at least six hours before serving.
