  • 1 cup plain Greek yogurt
  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1/2 cucumber
  • Cherry tomatoes
  • Red onion
  • Fresh dill
  • Olive oil
  • Lemon juice
  • 1 teaspoon dried oregano
  • 2 garlic cloves, minced
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • Fresh parsley or dill, for garnish

Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, oregano, minced garlic, smoked paprika, salt, and pepper. Add chicken and coat well; cover and refrigerate for at least 15 minutes.
  2. Cook the chicken: Heat olive oil in a skillet over medium heat. Cook marinated chicken for 6–7 minutes on each side until golden brown and cooked through (internal temperature of 165°F). Let rest before slicing.
  3. Make tzatziki: In a bowl, combine Greek yogurt, grated cucumber (squeezed to remove excess water), olive oil, lemon juice, minced garlic, dill, salt, and pepper. Stir until smooth.
  4. Assemble bowls: Start with rice as the base; top with sliced chicken, cherry tomatoes, diced cucumber, red onion, olives, feta cheese (optional), and tzatziki sauce.
