  • 2 gala apples (peeled, cored and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons butter (or coconut oil for vegan option)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans or walnuts
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine butternut squash and diced apples. Add cinnamon, vanilla extract, and brown sugar; mix well.
  3. Season with salt and black pepper.
