  • 2 gala apples, peeled, cored, and diced
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons butter or coconut oil (for vegan option)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans or walnuts
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the butternut squash, diced apples, cinnamon, brown sugar, and vanilla until well combined.
  3. Season with salt and pepper; mix again.
  4. Transfer the mixture to a baking dish and dot with butter.
  5. Cover and bake for 15 minutes.
