  • 5 Tablespoons unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1 teaspoon cinnamon
  • 2 Tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 Tablespoons unsalted butter (melted and cooled)
  • 2 1/2 Tablespoons milk

Instructions

  1. Cream together room temperature butter, granulated sugar, and brown sugar until fluffy.
  2. Beat in eggs and vanilla until combined.
  3. In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt; gradually add to wet ingredients.
  4. Chill dough for one hour; then preheat oven to 350°F (175°C) and prepare baking sheets.
  5. Make the filling by combining softened butter, brown sugar, cinnamon, and cake flour until smooth.
  6. Assemble cookies by placing filling between two layers of dough; pinch closed.
  7. Bake for about 11-13 minutes until lightly golden.
  8. Prepare icing by mixing all ingredients until smooth; drizzle over cooled cookies.
