  • ¾ cup peach preserves
  • 2 tablespoons extra virgin olive oil
  • 4 salmon fillets (about pounds)
  • 2 teaspoons apple cider vinegar
  • 2 medium peaches (pitted, thinly sliced)
  • 2 teaspoons soy sauce
  • 2 teaspoons Dijon mustard
  • 2 teaspoons garlic, minced
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a bowl, mix peach preserves, olive oil, apple cider vinegar, soy sauce, Dijon mustard, garlic, salt, black pepper, and red pepper flakes to create the marinade.
  2. Reserve half of the marinade and marinate salmon fillets in the remaining mixture for at least 30 minutes.
  3. Preheat oven to 375°F. Sear marinated salmon skin-side up in an oven-safe skillet with oil for 2-3 minutes.
  4. Flip the salmon skin-side down and add sliced peaches around it. Cook for another 2-3 minutes.
  5. Pour reserved marinade over salmon and peaches, then bake in the oven for about 12-15 minutes until cooked through.
