  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 3/4 cup all-purpose flour (divided)
  • 1/2 cup old-fashioned oats
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar (for topping)
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 6 tablespoons cold butter (diced)

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a large bowl, combine blueberries, sliced peaches, lemon juice, lemon zest, vanilla extract, granulated sugar (1/2 cup), and flour (1/4 cup). Toss gently until coated.
  3. In another bowl, mix remaining flour (1/2 cup), oats, brown sugar, granulated sugar (1/4 cup), salt, and cinnamon. Add the cold diced butter and mix until crumbly.
  4. Pour the fruit mixture into a baking dish and sprinkle the crumble topping evenly over the top.
