  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Salt
  • Pepper

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat and cook chicken for 5-7 minutes on each side until golden brown. Set aside.
  2. In a saucepan, bring chicken broth and a pinch of salt to a boil. Stir in rice, reduce heat, cover, and simmer for about 15-20 minutes until tender.
  3. In the same skillet used for the chicken, melt butter over medium heat. Whisk in flour to create a roux; gradually add milk and reserved broth until smooth and thickened. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  4. Return chicken to the skillet and coat with sauce. Serve over fluffy rice.
