Ingredients

Scale
  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves
  • 3 cups low-sodium beef broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and cook until softened (3-4 minutes).
  2. Add ground beef to the skillet; cook until browned, breaking it apart as it cooks. Drain any excess fat.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add rice, beef broth, Italian seasoning, salt, and pepper; stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
  6. In a separate saucepan, melt remaining butter over low heat and whisk in milk, cheddar cheese, and Parmesan until smooth.
  7. Pour the cheese sauce into the beef and rice mixture; stir gently to combine.
  8. Allow to cook uncovered for a few minutes before serving hot.
