  • 2 large chicken breasts (sliced into 4 fillets)
  • 4 ounces cream cheese (softened)
  • 3/4 cup heavy cream
  • 4 cloves garlic (minced)
  • 8 ounces sun-dried tomatoes (chopped)
  • 3/4 cup fresh spinach (chopped)
  • 1/4 cup Parmesan cheese (grated)
  • 3/4 cup mozzarella cheese (grated)

Instructions

  1. Preheat your oven to 400°F (204°C).
  2. Slice chicken breasts horizontally into fillets and arrange them in a baking dish. Season with salt and pepper.
  3. In a bowl, mix cream cheese with heavy cream until smooth. Stir in minced garlic, onion powder, paprika, and Italian seasoning. Fold in Parmesan and half of the mozzarella.
  4. Spread the cream mixture over the chicken and top with sun-dried tomatoes.
  5. Cover with foil and bake for 20 minutes until chicken reaches 165°F (74°C).
  6. Add spinach and remaining mozzarella on top; bake uncovered for another 10 minutes until cheese melts.
