Ingredients

  • 8 eggroll wrappers
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapeño peppers, seeded and finely chopped
  • 1 green onion, finely chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped jalapeños, green onion, garlic powder, salt, and pepper until well blended.
  2. Lay an eggroll wrapper on a clean surface. Place about 2 tablespoons of the filling diagonally across the center. Fold the bottom corner over the filling first, then fold in the sides and roll tightly into a burrito shape. Seal edges with water.
  3. Heat vegetable oil in a deep skillet to about 350°F (175°C).
  4. Fry eggrolls seam side down in batches until golden brown and crispy, about 3-4 minutes.
  5. Drain on paper towels and serve hot with your favorite dipping sauce.
