  • 2 medium apples, chopped into small pieces
  • 2 ½ Tablespoons light brown sugar
  • 1 Tablespoon lemon juice
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 Tablespoon corn starch
  • 2 Tablespoons water (or more if needed)
  • 4 cups French bread, cut into small ½ inch cubes
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 2 Tablespoons light brown sugar
  • ½ teaspoon vanilla
  • ¼ teaspoons nutmeg
  • ¾ teaspoon cinnamon
  • 2 Tablespoons melted butter
  • 3 Tablespoons maple syrup
  • 1/3 cup chopped pecans

Instructions

  1. Prepare the apple filling by cooking chopped apples, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch in a saucepan over medium heat for about 5-10 minutes until softened.
  2. Cut French bread into small cubes and place in a large bowl.
  3. In another bowl, whisk together eggs, milk, cream, sugar, vanilla extract, and spices; pour over bread cubes and let soak for 15 minutes.
  4. Make the pecan topping by mixing melted butter, maple syrup, and chopped pecans in a separate bowl.
  5. Preheat oven to 350°F (175°C). Line a muffin pan with parchment paper; fill each cavity with soaked bread mixture and top with apple filling and then the pecan topping.
  6. Bake for approximately 10 minutes initially; add the topping and bake for another 12-15 minutes until golden brown.
  7. Serve warm with additional maple syrup if desired.
