  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 300 g granulated sugar (divided)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole or plant-based)
  • 2 tbsp cornstarch
  • 2 tsp vanilla bean paste

Instructions

  1. Peel and slice the apples thinly. Toss them in a bowl with half the sugar, salt, and cornstarch.
  2. In a saucepan over medium heat, cook the apple mixture for about 20-25 minutes until softened and syrupy.
  3. For the custard, whisk egg yolks with cornstarch, remaining sugar, salt, and vanilla paste. Heat milk until boiling and gradually mix into the egg mixture while whisking continuously.
  4. Return to heat and stir until thickened (5-10 minutes). Let cool slightly.
  5. Layer cooked apples and custard in a dish until all ingredients are used up. Finish with custard on top.
  6. Refrigerate for at least an hour before serving.
