  • 30 g light brown soft sugar (for filling)
  • 1/2 tsp cinnamon (for filling)

  • 1 tsp cornflour (cornstarch) (for filling)
  • 10 g unsalted butter (for filling)
  • 8 g light brown soft sugar (for crumble topping)
  • 17 g plain flour (for crumble topping)
  • 1/8 tsp cinnamon (for crumble topping)
  • 175 g unsalted butter (softened, for cupcakes)
  • 175 g light brown soft sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175 g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (softened, for frosting)
  • 350 g icing sugar (for frosting)
  • 1 1/2 tsp cinnamon (for frosting)
  • 23 tbsp milk (for frosting)

Instructions

  1. Prepare the apple filling by peeling, coring, and chopping apples. Cook them with light brown sugar, cornflour, cinnamon, and mixed spice on low heat for 10-15 minutes until tender. Allow to cool completely.
  2. For the crumble topping, mix flour, sugar, and cinnamon; rub in softened butter until resembling breadcrumbs. Bake at 180C (375F) for 10-15 minutes until golden.
  3. Preheat oven to 160C (350F). Cream together softened butter and sugar for cupcakes, then add eggs one at a time until well combined.
  4. Fold in self-raising flour along with cinnamon and mixed spice until just combined. Fill cupcake cases two-thirds full and bake for 20-25 minutes.
  5. Once cooled, core each cupcake and fill with apple mixture. For frosting, beat butter until creamy; gradually add icing sugar and milk until smooth. Frost each cupcake and top with additional apple filling and crumble.
